On Saturday, our pricey friend Danielle, turned 50, not possible to believe! we tend to celebrated at our house with a raucous cluster of previous friends joining us for a champagne and pancake brunch. I actually have to admit that I had an ulterior motive for hosting the party and serving pancakes. For the previous few months, I actually have been developing 3 pancake mixes: Blue Corn Pancake combine, Oatmeal Cookie Pancake combine and lots of Grains Pancake combine. I hope to start take a look at selling them in could at our store beneath the brand Wholly Whole Grains. My family is completely sick of testing pancakes, thus Danielle’s birthday offered me a chance to do out our new mixes on a crowd. i’m happy to report that the feedback was good!
In light-weight of those mixes being proprietary formulas, I will not be posting the recipes, however I needed to share the egg dish we tend to created to spherical out our menu. It very turned out nice and is a straightforward thanks to serve eggs for a crowd. you’ll be able to build them ahead and bake them when your guests arrive. attempt these for Easter brunch.
All in One Eggs:

(to wilt spinach, just put in a skillet over medium high heat with a few Tbsp. of water and cook until just barely limp, cool, drain and season)
2 oz grated Parmesan Cheese
2 tbsp butter
3 tbsp whipping cream
salt & pepper to taste
paprika to sprinkle
Preheat oven to 350. Spray twelve muffin cups with non-stick spray. place a little pat of butter in every cup. Line the cups with the wilted spinach leaves, do not be to fussy here, simply place some spinach on rock bottom of every cup. Crack an egg in every spinach lined muffin cup. drizzle a little little bit of cream over all, sprinkle with Parmesan cheese, salt, pepper and paprika. Bake concerning quarter-hour or till egg is about. Serve heat or at space temperature.

Instead of spinach, line the muffin cups with partially cooked bacon or ham.
For a Mexican aptitude use tortilla strips to line your cups and substitute salsa and jack cheese for the Parmesan and cream.
The possibilities are endless.
